And it was fabulous! Its full and deep flavor was a thing to remember, luring us to eat a bit more, and a bit more, but the truth is you can't eat much - the soup is very hearty as well!
I would strongly recommend you this recipe for wintertime, to warm you up, but it doesn't mean that the warmness of the summer should make you hesitate! :)
Those are the ingredients needed:

- Cut onion into half, then into thin slices. Mince the garlic.
- Heat oil into a pot over high fire and add onion. Sprinkle with some salt and cook, stirring often, until soft and tender. Add garlic and thyme and cook for a couple more seconds. Then, pour in broth, reduce the fire to low and simmer for 2-3 minutes.
- Now add beer and 250 ml of water and continue simmering for 10-15 minutes with the lid partially lifted. Onions should start falling apart and give the soup a creamy look and texture.
- If you find the soup too thick at this point, add some more water and simmer for a couple more minutes. If you, however, think it's too thin, then extend the cooking time. We found it perfect with this quantity of water.
- Doctor the taste with some more salt and some pepper and remove from fire.
Serve warm, with your favorite bread, preferably roasted.
