Directions:
1. Put oil in a deep pan and heat it over medium fire. Add finely chopped onions and cook, stirring often, until they are fully done.
2. Add rice, taco seasoning and curry powder and stir.
3. Pour in tomato sauce and 2 cups of warm water and cook over medium fire, stirring occasionally, until rice is almost done - it should be al dente.
Add some more water gradually while cooking, like 1/2 cup at a time, as you should have left just a little liquid when it's done. I used 3 1/2 cups this time, but it depends on the rice.
4. Remove the pan from fire and stir in beans and cheese. Also, add some more salt if needed.
You can use canned or leftover beans. The important thing is that they are not too spiced or too seasoned.
5. Transfer the mix into a suitable baking pan. The layer should not be too thin.
Of course, you can leave it in the same pan if it is oven proof.
Bake in a preheated oven at 200°C for approximately 20 minutes, or until it gets a thin crust on top.
