To cut the story, I won’t talk much, but I’ll proceed to the recipe right away…
You’ll need the following ingredients:

1. Combine hot water and yeast until yeast has fully dissolved. Add 1 Tbsp. flour, mix and set aside for 7-8 minutes until yeast has been activated, that is until some foam has appeared. Note that water should be hot but not boiling. Its temperature is ok when you can put a finger inside without burning yourself. :)
2. Combine flour, salt, sesame and caraway seeds, add yeast mixture and oil. Knead until you get a smooth dough. Add some more flour if it’s too sticky or some warm water if it’s too dry. You should get a medium stiff dough. Cover with a kitchen towel and let it rise for about half an hour. Re-knead the dough.
My mum’s recipe says you should divide the dough into several parts and make a thin roller out of each part. Then you should cut out tiny pieces of dough using scissors. It should look like in the photo below…

4. Lightly grease a baking pan and arrange the crackers leaving a small space between them. If you cut the dough with scissors, let the pieces fall right onto the pan. Bake at 200°C for about 10 minutes.
5. Once crackers are baked, put them in a deep dish, sprinkle with some oil and salt and shake. This will make them even crispier. |
As I already said, they get really well with beer, but you can also serve them to your kids with some nice juice :)
