Besides, they're my favorite. As I already said, my grandma used to make them very often, and I asked for them even oftener. :) These Acorn Cookies here are made by me... So, I would like to thank my grandma for teaching me how to make my favorite cookies by my own, and I would like to dedicate this post to her. Love you, grandma!
You'll be needing the following ingredients:

1. Beat eggs and sugar until combined. Sugar does not have to melt completely. Add honey and oil and mix again, using a whisk or a hand mixer, until combined.
If you do have some cookie cutter similar to this, you'll just need to roll out the dough to a 5mm thickness and cut as many cookies as you can. Then, re-knead the dough and repeat the procedure as many times as necessary until you spend all the dough.

If, however, you don't have this cookie cutter, you'll have to shape the cookies one by one, as I described it at the beginning of the step 3.
4. Arrange the acorn cookies onto a baking pan covered with some parchment paper (or lightly greased), and bake into a preheated oven at 200°C, 7-8 minutes, until lightly browned. Be careful not to bake them too long as they will be hard and lose their aroma eventually. So, here they are: the baked acorn cookies :) |
At this point you'll see the advantages of the cookie cutter: it makes equal-sized cookies, that you probably can't do with your hands, so you won't have to search for a cookie that is the same size like the previous one to make a nice "sandwich"... :) But don't worry - it's just a matter of practice.
7. And eventually, let's give those acorn cookies their final look: deep each sandwich cookie into the icing, but only to the half lengthwise, like shown in the photo below. If you wish, you can roll each chocolate side into coconut flakes or minced walnuts. I like them most with the icing only. :) Arrange them in one row only until the icing thickens.
Note that these cookies are excellent even without the jam and the icing, just the biscuit. So, if you wish, you can stop to step 4... In this case, you can use any cookie cutter, or make cherry-sized balls and bake them.
