This is not a classic traffic light soup composition that you will serve into three different soup plates. It's rather an all-in-one soup that gathers the three traffic light colors into one single pot.
There is no need to talk about how healthy this soup is, it's just a fact... :) I would just say that it abounds with tastes and textures, making your dinner time a real joy for your taste buds.
So, let's turn on the lights! :)
First, prepare these ingredients:

Directions:
1. Pour oil into a soup pot and heat it. Add finely chopped onion and cook over medium heat until soft and browned.
2. Add peas, corn and diced carrots and cook for a few more minutes, stirring occasionally. Spice with salt and pepper and pour water, approximately 3 cm above the vegetables. Bring it to a boil and reduce temperature to the lowest. Cover the pot and cook until all vegetables become soft and tender.
3. Combine flour, paprika and 100 ml cold water to get a smooth mixture.
4. Increase heat to medium-high and add the flour mixture into the pot. Stir and cook for a few more minutes, until you get the desired thickness. Doctor the taste with some more salt and parsley.
Serve warm as a hot appetizer or a light main dish with some bread.
Enjoy and bon appétit!
