Here's what you'll need to prepare this coconut-pineapple cake:

- Drain and dice pineapple flesh. Save the juice. Melt the butter and let it cool slightly.
- Beat eggs and sugar using a hand mixer, until sugar melts. Reduce the speed to the lowest and gradually add melted butter. Add vanilla extract.
3. Combine flour, coconut and baking powder. Add it to the eggs-butter mixture and mix until fully combined. Add pineapple flesh and combine using a spoon. You'll get a quite thick mixture.
4. Grease and flour a baking pan (I used a 25x25cm pan) and pour the cake mixture. Flatten it using the back of a wet spoon and bake into a preheated oven at 180°C until a toothpick inserted into the center comes out clean (app. 40 minutes). |

You'll need approximately 300 ml of pineapple juice for the cake to be moisturized enough.
