Directions:
1. Bring some water to boiling. Add 1/2 teaspoon salt and rice. Cook until soft and tender. Drain well.
Round grain (short-grain) rice is the best for this type of dishes, as it's sticky when cooked, so it can be easily shaped without falling apart.
2. Combine cooked and drained rice, finely chopped onion and deli meat, both cheeses and spice with salt and pepper. Knead it using your hands until you get a homogenized "dough". Shape the mixture as you wish. I made apricot-sized balls and I got 15 pieces out of this ingredients.
4. Heat the oil and fry the rolled balls until golden-brown from each side.
