You can choose the type of meat, but bear in mind that beef and pork would be the most suitable. Chicken and turkey will also taste excellent in this combination, though it won't be the real bolognese taste any longer... :) I used pork this time.
So, these are the ingredients you'll need to prepare 4 servings:
- 4 pork steaks
- 600 g fresh ripe tomatoes
- 1 large onion
- 1-2 garlic cloves
- 1 small carrot
- 200 ml red wine
- 4-5 tablespoons oil
- 1 teaspoon dried rosemary
- 1 teaspoon dried basil
- 1 teaspoon red pepper flakes
- 1/2 teaspoon dried oregano
- to taste salt and pepper
- 3 tablespoons flour
- sugar to taste
1. Use a meat mallet to tenderize steaks. Then, sprinkle them with some pepper to taste.
2. In a small bowl, combine rosemary, basil, oregano and pepper flakes. Use your fingers to spread and rub the spice mix on the both sides of each steak. Set aside for a few minutes, until you prepare the vegetables.

3. Finely chop the onion. Mince the garlic. Finely grate the carrot. Peel the tomatoes and chop them finely or use a blender to mince them.
4. Once you have done the veggies, sprinkle the steaks with some salt to taste and roll them into flour, so they are fully covered. Adding salt right before cooking the meat will prevent it from drying excessively. |
6. Now, reduce fire to medium-high add onions in the same pan. There's no need to add extra oil. Cook onions until soft and tender, stirring often. Add garlic and carrots and cook for less than a minute, until garlic releases its distinctive aroma. Add tomatoes and combine. Put the steaks back in the pan and shake the pan a bit so that the sauce "covers" the meat. Once the mixture comes to a boil, reduce fire to the lowest and simmer with the pan being partially covered.
Note that you can use 600 g of canned tomatoes altogether with the juice or 500 ml of tomato sauce instead of fresh tomatoes.
7. After tomato sauce has been reduced to half, pour in the wine and shake the pan so it disperses evenly. Continue cooking for 5 more minutes. Than, taste the sauce and see if you need to add some salt and pepper and maybe some sugar. If you want a more spiced sauce, add some dried basil and rosemary as well.
8. When you get the desired thickness of the sauce, remove the pan from fire.
Serve the Bolognese Steaks with some french fries and some fresh salad by choice. Perhaps you'll like some of these fresh salad ideas.
