This recipe is labeled "gluten-free", but please pay attention to the choice of bacon/meat.
Directions:
- Bring some water to boiling. Add some salt. Add rice and cook until soft. Be careful not to overcook it, as it will be too doughy and sticky later. Rinse it with cold water to stop cooking and drain. As I already mentioned in the ingredient list, you can use cooked rice leftovers instead.
- Meanwhile, prepare the rest of the ingredients: chop the bacon (or the deli meat) and grate both cheeses.
- Beat the eggs using a whisk or a fork. Add rice and combine. Add grated cheeses and combine once again. Add spices to taste.
4. Heat the oil and fry the bacon for few seconds, until crispy. Add the rice mixture and cook stirring occasionally for 3-4 minutes.
This time I served it with naan bread. I used some heart-shaped cookie cutters to add this "ordinary" dish a pinch of style, but a simple pouring from the pan onto a plate won't cut down its taste at all. :)
