These are the ingredients needed to make approx. 40 mini donuts:
- 2 eggs
- 4 tablespoons sugar
- 200 ml yogurt
- 15 tablespoons flour
- 10 g baking powder
- 1/2 teaspoon vanilla extract (optional)
- approx. 300 ml oil for frying
Directions:
- Beat eggs and sugar until sugar dissolves. You can whisk them or use a hand mixer to do it the quicker way. Add vanilla extract at this point, if using any. Then, add yogurt. You can use either regular drinkable, or Greek-style yogurt.
- Combine flour and baking powder and gradually add it to the eggs mixture while mixing. Make sure there are no lumps. You'll get a thick and sticky batter.
Heat the oil over medium-high fire. It should be well heated, but not hot. Hot oil will burn donuts from the outside and leave them raw from the inside.

4. When oil is heated enough, start with frying the donuts. Take 1 teaspoon of batter and put them down into the oil. You'll see it gets a crust really fast, within a seconds. Put as many donuts as you can. Once they've get a lightly brown color, turn them and fry for a couple of seconds from the other side as well.
Take the fried donuts out from the pot and put them on a paper towel to soak up the excess fat. Repeat this procedure as many times as needed until you spend all of the batter. |
