So, I chose this Apple Honey Pie to be the first sweet pie recipe on my blog, as it's so easy to prepare it and it's made of ingredients everybody likes. I mean, apples are the first thing that crosses your mind when you think of sweet pie, isn't it so? :)
Before I list the ingredients needed, I shall say I made it as a roulade and then cut it into pieces, but you can also make triangles, as described in step 4 in this baklava recipe post.
Ingredients needed for 1 roulade/6 triangles:
- 3 filo pastry sheets
- 1 medium-sized apple
- to taste honey
- to taste cinnamon
- 3 tablespoons oil
- 6 tablespoons sparkling water
- 1/3 teaspoon baking powder
Directions:
- Combine baking powder, oil and sparkling water (you can use regular tap water as well). I'm using this same glaze for almost any pie with dry filling to moisturize the pastry.
Peel and grate the apple. - If making a roulade, place two sheets on the top of each other and generously brush them with the glaze. Then put the third sheet on the top and drizzle with some honey to taste, depending on how sweet you want the pie. I used 2 heaping tablespoons. Sprinkle with grated apple and some cinnamon, if desired.
4. As I mentioned, you can shape the pie into triangles as well. Brush each filo sheet with the glaze, then cut it into half. Fold each half into half, so that you get a long stripe. Drizzle with honey, sprinkle with grated apples and fold as described in step 4 here.
5. Make as many pieces or roulades as you want, and bake them into preheated oven at 200°C until crispy and golden brown.
Serve warm or cooled, sprinkled with some powdered sugar, if desired.

Note that if you want to prepare the vegan sustainable version of this pie, you can omit the honey and use some sugar or maple syrup instead. If using sugar, combine it with grated apples and sprinkle on the last filo sheet. It's delicious this way as well, but in my opinion, the aroma of honey-apples combo is just irresistible...
